▌ Process Flow — Stage by Stage

Stage 1 — Curing: Brine Injection & Vacuum Tumbling

Uniform curing salt distribution throughout the product is as important to the final flavour and colour of smoked ham and bacon as the smoking stage itself. The brine injector delivers curing brine — nitrite salt, phosphate, and seasoning — directly into muscle tissue, ensuring consistent distribution from surface to centre. Vacuum tumbling for 4–8 hours completes protein extraction and brine redistribution, producing the consistent pink colour and water retention that define premium cured smoked meats.

Stage 2 — Filling (Sausage Products): Vacuum Stuffer & Tying Machine
