Shelf-stable meat jerky requires two simultaneously controlled outcomes that are technically in tension: low enough water activity (aw < 0.85) for ambient stability without refrigeration, and tender, non-brittle texture that makes the product enjoyable to eat. High-temperature drying achieves low water activity quickly but produces hard, brittle, or case-hardened product. Low-temperature drying preserves texture but takes too long and risks microbial growth if humidity is not actively controlled. The drying curve — the sequence of temperature and humidity settings through the drying cycle — is the engineering challenge that determines whether jerky is shelf-stable, texturally acceptable, and colour-consistent.

The line handles both whole-muscle jerky (sliced from fresh or thawed primals) and restructured jerky (formed from mince raw material), covering the two production pathways used by the majority of retail jerky brands globally.

 

▌ Process Flow — Stage by Stage

Stage 1 — Raw Material Preparation: Slicing or Forming

For whole-muscle jerky, the meat slicing machine produces uniform strips at ±0.1 mm thickness — the primary determinant of how evenly product dries across the batch. Thickness variation of more than ±0.5 mm produces a mixed batch where thin pieces are over-dried and brittle while thick pieces are under-dried and potentially unsafe. For restructured jerky, the bowl chopper and forming machine process mince into standardised strips or slabs — enabling cost-effective use of lower-value meat raw materials while producing a consistent product with defined dimensions.

Stage 2 — Rapid Marination: Brine Injector & Vacuum Tumbler

Sliced or formed jerky strips are marinated through brine injection and vacuum tumbling — compressing traditional overnight soaking to a 2–4 hour cycle. For whole-muscle jerky, injection distributes flavour compounds uniformly through the muscle tissue, preventing the surface-concentrated flavour that results from soaking. For restructured jerky, vacuum mixing incorporates seasoning uniformly throughout the mince matrix. Consistent marination produces consistent flavour intensity across every piece in the batch.

Stage 3 — Multi-Stage Drying: Hot Air Circulation Oven

Marinated strips are loaded onto trays in the drying oven, where the PLC-programmed drying curve controls temperature, humidity, and airflow through a sequence of stages: initial high-humidity low-temperature drying (preventing surface case-hardening), progressive humidity reduction (driving moisture from the interior), and final low-humidity setting (achieving target water activity). Three-dimensional airflow maintains ±1 °C temperature uniformity across all tray positions — eliminating the batch-edge overdryer and centre-underdryer variation characteristic of single-fan oven designs.

Stage 4 — Baking, Cooling & Packaging

A final high-temperature baking stage develops the surface Maillard browning and caramelisation that defines the colour and aroma of premium jerky. After cooling to ambient temperature, product passes through a metal detector before automatic nitrogen-flush packaging in moisture-barrier film — the two requirements for shelf-stable jerky distribution at ambient temperature.
