Meatech's sausage production line covers every stage from raw meat preparation through emulsification, filling, segmenting, and the complete drying-smoking-cooking thermal cycle. The line is configurable across a wide product range — fresh pork sausages, emulsified hot dogs and frankfurters, large-diameter red sausage and bologna, Chinese lap cheong, fermented salami, and air-dried specialty products — without hardware changes between product types. PLC recipe recall handles product transitions, allowing multi-SKU operations to run efficiently on a single line.

 

▌ Process Flow — Stage by Stage

Stage 1 — Raw Material Preparation: Bone Saw & Slicing

Frozen blocks or fresh cuts are segmented by the bone saw to the input dimensions required by the grinder or mixer. The bone saw's servo-driven feeding system maintains ±0.1 mm cut consistency across the shift, preventing irregular chunks that cause grinder blockages and emulsification variation.

Stage 2 — Blending & Emulsification: Vacuum Mixer & Bowl Chopper

Meat, fat, seasoning, and auxiliary materials are blended in the vacuum mixer under -0.08 MPa, ensuring even distribution of all ingredients without air inclusion. For emulsified products (hot dogs, frankfurters, luncheon sausage), the bowl chopper processes the blend at up to 4,500 rpm — extracting salt-soluble proteins to create the stable meat emulsion that gives these products their characteristic snap, uniform slice face, and cook yield improvement of 10–15%.

Stage 3 — Filling & Portioning: Vacuum Stuffer & Tying Machine

The vacuum sausage stuffer fills casing under -0.08 MPa negative pressure, eliminating air pockets and preventing fat oxidation at the fill stage — directly protecting the bright red colour consumers associate with product freshness. Quantitative accuracy of ±2 g at 400 g product weight is maintained at 150–400 cycles per minute across all casing types. The automatic tying machine then segments and knots at 60–80 ties per minute, saving 10–20% of casing material versus manual tying through tighter, more consistent tie placement.

Stage 4 — Thermal Processing: Drying Oven & Smokehouse

The drying oven removes surface moisture to prepare the casing for smoke uptake — its three-dimensional hot air circulation maintains ±1 °C temperature uniformity and the programmable drying curve controls moisture removal rate precisely. Product then transfers to the smokehouse, where drying, smoking, and cooking are completed in a single automated chamber. Three smoking methods — wood chip, sugar, and liquid smoke — produce the full range of smoke profiles required by different markets and product specifications.
