Knife Sterilizer

The Meatech MT-KNS knife sterilizer provides spray-method sterilization of butcher knives, boning knives, and slaughter tools at each operator workstation — applying a fine mist of hot water or disinfectant solution directly onto the blade and handle surfaces to inactivate pathogens between carcasses. The spray method ensures consistent sterilant coverage of all blade surfaces including the flat faces, spine, and handle without requiring the operator to manually immerse and agitate the knife, reducing the per-sterilization cycle time at the workstation to a brief spray pass that does not interrupt line flow.

▌Product Description

Constructed from SUS304 stainless steel with a net weight of 70–90 kg, the MT-KNS is a per-workstation unit sized for fixed installation at each operator position along the slaughter line, boning room, or meat cutting area. Power consumption of 2.2–3 kW at 380V/50Hz matches standard food factory power supply. The fully customisable design allows the spray head configuration, basin dimensions, and mounting arrangement to be specified to match the workstation layout and the operator's workflow. As with all knife sterilization equipment, the MT-KNS supports HACCP knife hygiene CCP documentation through the installation record and regular sterilizer performance checks.

▌Solution Applications

Solution / Line

Role of MT-KNS

Cattle / pig / sheep slaughter lines

Between-carcass knife sterilization at sticking, skinning, evisceration and inspection positions. Spray method provides rapid full-surface coverage for between-carcass use.

Boning and deboning rooms

Per-position knife sterilization during primary and secondary meat breakdown. Between-product sterilization prevents cross-contamination between product types processed in sequence on the same boning table.

All meat processing lines

Workstation knife hygiene CCP — the MT-KNS provides the physical control mechanism that HACCP audit programmes verify at each knife-use position in the facility.

▌FAQ

Q:  What is the difference between spray sterilization (MT-KNS) and hot water immersion (basin-type)?

A:  Spray sterilization delivers a fine mist or jet of sterilant directly onto all surfaces of the knife blade and handle in a brief spray pass — covering all surfaces simultaneously without requiring manual immersion. Hot water immersion (basin-type) requires the operator to place the knife into a basin of ≥82°C water and hold for the required contact time. The spray method is faster per sterilization cycle (seconds vs a brief hold time for immersion) and ensures consistent coverage of complex blade geometries including serrated edges and hollow-ground blades where full immersion contact may be incomplete. The MT-KNS spray method is suitable for operations where between-carcass sterilization time must be minimised; the basin format (MT-KNS basin series) is preferred where regulatory specifications explicitly require immersion sterilization.

Q:  What sterilant solution is compatible with the MT-KNS spray system?

A:  The MT-KNS spray system is compatible with hot water (82°C+), quaternary ammonium compound (QAC) solutions, chlorine-based solutions (100–200 ppm free chlorine), and peracetic acid solutions (100–200 ppm) — the four sterilant types most commonly specified in meat processing HACCP plans for knife hygiene. Solution selection should follow the facility's HACCP plan and the specific knife sterilization protocol approved by the food safety management system consultant. The SUS304 stainless steel construction is compatible with all standard food-grade sterilant concentrations without corrosion risk.
