The Meatech MT-BS bone saw machine cuts fresh, chilled, and frozen bone-in meat — pork ribs, beef short ribs, whole chickens, lamb racks, and other primal cuts — into precise retail and food-service portions. Two models cover the standard commercial and light-industrial range: the MT-BS-300 with a 300 mm pulley diameter and 22 m/s blade speed, suited to bone-in poultry and smaller pork cuts; and the larger MT-BS-400 with a 400 mm pulley diameter and 34 m/s blade speed for harder frozen blocks, large pork and beef bones, and higher-throughput applications.

▌Product Description

The Meatech MT-BS bone saw machine cuts fresh, chilled, and frozen bone-in meat — pork ribs, beef short ribs, whole chickens, lamb racks, and other primal cuts — into precise retail and food-service portions. Two models cover the standard commercial and light-industrial range: the MT-BS-300 with a 300 mm pulley diameter and 22 m/s blade speed, suited to bone-in poultry and smaller pork cuts; and the larger MT-BS-400 with a 400 mm pulley diameter and 34 m/s blade speed for harder frozen blocks, large pork and beef bones, and higher-throughput applications.

The band saw format — a continuous blade loop running over two pulleys — delivers a clean, straight cut through bone and frozen material with minimal meat loss at the cut face, compared to circular saw or chopper configurations that generate more bone dust and shatter. The worktable dimensions (630×790 mm for the S300; 750×880 mm for the S400) provide adequate support for standard primal cuts and frozen blocks up to the table size. All food-contact surfaces are SUS304 stainless steel, and the blade guard and table fence are designed for HACCP-compliant cleaning after each production run.

▌FAQ

Q:  Can the MT-BS cut fully frozen meat blocks?

A:  The MT-BS-400 (34 m/s blade speed, 3 kW motor) is rated for semi-frozen and lightly frozen bone-in meat at temperatures down to approximately -5°C. For fully frozen blocks at -18°C, the MT-FBC frozen meat block cutter is the correct first-stage machine — it reduces the frozen block to a manageable size; the MT-BS then handles the portioning from the partially thawed or tempered pieces. Attempting to cut fully frozen -18°C blocks on the MT-BS will damage the saw blade and reduce cutting accuracy.

Q:  How often does the saw blade need to be replaced?

A:  Blade service life depends on material hardness and volume cut. For fresh and chilled bone-in pork and poultry, a well-maintained blade typically runs for 4–8 weeks of standard-shift operation before sharpening or replacement is required. Frozen material and hard beef bone significantly reduce blade life. The MT-BS is designed for easy blade change — the blade loop is removed and replaced without tools in approximately 5–10 minutes. Replacement blades (2,400 mm for S300; 3,160 mm for S400) are standard catalogue items available from Meatech as spare parts.
