Frozen Meat Block / Dicing Machine

The Meatech MT-FBC frozen meat block and dicing machine reduces frozen or chilled meat blocks to defined piece sizes — feeding the downstream grinder, thawing machine, or processing stage with consistently sized input material. Two models address different throughput and application requirements: the MT-FBC-300 (300–500 kg/h, 3 kW) for smaller-scale operations and central kitchens; and the MT-FBC-1000 (500–1,000 kg/h, 2.6 kW, variable conveyor speed 3–18 m/min) for higher-throughput industrial lines where the cutting speed needs to be matched precisely to the downstream grinder or thawing machine input rate.

▌Product Description

Dicing thickness is adjustable from 5 mm to 30 mm on both models — covering the range from small dice for rapid thawing (thin pieces thaw faster and more evenly in a thawing machine) through to larger chunks for grinder pre-breaking. The 300 mm conveyor belt width accommodates standard commercial frozen block formats. Both models operate on 380V/50Hz, with cutting speed on the MT-FBC-1000 adjustable at 87 cutting cycles per minute (MT-FBC-300) or 3–18 m/min belt speed (HKQDJ300-VII) for matching to line speed.

▌Solution Applications

Solution / Line

Role of MT-FBC

All frozen-input meat lines

First-stage size reduction of -18°C frozen blocks before thawing machine or grinder. Thin diced pieces (5–10 mm) thaw 3–4× faster than whole blocks in a low-temperature high-humidity thawing machine, reducing thawing cycle time and improving temperature uniformity.

Sausage Production Line

Reduces frozen raw material blocks to grinder-feed size. The 500–1,000 kg/h capacity of the HKQDJ300-VII matches the input rate of the MT-MG-1000 or MT-MG-1500 grinder models.

▌FAQ

Q:  What is the difference between MT-FBC and MT-BS for frozen meat?

A:  The MT-FBC is designed for bulk size reduction of frozen blocks — converting a 10–25 kg frozen slab into a stream of small pieces (5–30 mm thick) for rapid downstream thawing or direct grinding. It is a volume-throughput machine, not a precision portioning machine. The MT-BS (bone saw) is a precision portioning machine for fresh, chilled, or lightly frozen bone-in cuts — producing retail-standard rib portions and chop cuts where cut accuracy and presentation quality matter. For an industrial line processing imported -18°C frozen blocks, the MT-FBC handles the initial size reduction; the MT-BS handles precision portioning of thawed or chilled material downstream.

Q:  Can the dicing thickness be changed during a production run?

A:  On the MT-FBC-1000 model, the belt speed (3–18 m/min) can be adjusted during operation to vary the effective piece size by changing the feed rate — this provides some flexibility without stopping the machine. Changing the blade spacing to alter the primary cut dimension requires a brief machine stop. The MT-FBC-300  dicing thickness change requires a mechanical adjustment that takes approximately 5–10 minutes.
