Premium meatball products — particularly those sold into hotpot chain supply and retail frozen food channels — are evaluated by buyers on three measurable attributes: bounce (elasticity when squeezed), weight consistency (for portion pricing and retail declaration), and cook stability (no cracking or splitting during boiling). These attributes are determined almost entirely by the emulsification and mixing process before forming — not by the forming machine itself. This is the most misunderstood technical aspect of meatball production, and the most common reason that meatball lines underperform despite good forming equipment.

Meatech's meatball processing line is engineered around the science of protein extraction and paste preparation — the bowl chopper and vacuum mixer stages that determine whether the finished meatball achieves the elasticity and bind that the market demands. The line then sequences forming, cooking or frying, IQF freezing, and packaging into a validated system with defined throughput, weight accuracy, and sanitation characteristics. Protein source flexibility means the same line handles pork meatballs, beef meatballs, fish balls, shrimp balls, chicken meatballs, and mixed protein products.

 

▌ Process Flow — Stage by Stage

Stage 1 — Paste Preparation: Bowl Chopper & Vacuum Mixer

Raw meat is processed through the bowl chopper at controlled blade speed and temperature — the critical parameter being the extraction of myosin, the salt-soluble protein that creates the gel network responsible for meatball bounce. Chopping temperature must stay below 12 °C throughout; the frequency-conversion drive allows precise blade speed control to match protein extraction requirements without generating excess heat. The vacuum mixer then incorporates fat, seasoning, starch, and ice under -0.08 MPa, removing air inclusions that would create voids and reduce elasticity. Ice addition maintains paste temperature at 4–8 °C — the optimal range for myosin gel formation.

Stage 2 — Forming: Meatball Forming Machine

Chilled paste is fed to the meatball forming machine, which produces spherical pieces at ±1 g weight accuracy across the full shift. Diameter is adjustable in the forming mold — typically 20 mm to 45 mm for standard hotpot and retail meatballs. The forming rate of up to 1,000 kg/h eliminates the speed limitation of manual rolling, which is both the highest-labour and highest-variation stage in traditional meatball production.

Stage 3 — Setting & Cooking: Continuous Fryer or Cooking Tunnel

Formed meatballs enter a continuous cooking system for surface setting and thermal treatment. Frying at controlled temperature (±1 °C) develops the golden surface colour and crisp texture of fried meatball products while locking internal moisture. For products where an unfried appearance is required (white fish balls, clear-soup hotpot balls), a continuous hot water or steam cooking tunnel achieves internal pasteurisation without surface browning. Both options can be specified for the same line.

Stage 4 — IQF Freezing, Inspection & Packaging

Cooked meatballs are individually quick-frozen at -35 °C, preventing inter-piece freezing that causes clumping in bulk packs. IQF product is free-flowing, enabling automatic weighing and bag-fill packaging without manual separation. In-line metal detection provides 100% inspection — a requirement for export markets and retail chain buyers in most destination countries.
