Slice thickness consistency is the primary measure of slicer performance for retail applications — ±0.5 mm variation across a production shift produces visible weight giveaway in retail packs and inconsistent cooking time in food-service applications. The MT-SM series achieves this consistency through a rigid belt guide system and precision blade-to-guide clearance, with the dual-channel model (MT-SM-140A-D) doubling output by processing two product streams simultaneously through independent cutting lanes.

Fresh Meat Cutting & Packing

Primary retail portioning stage. Receives primal cuts from the bone saw and produces retail-standard slices for direct transfer to the MAP packaging machine. Slice thickness determines pack weight — precision slicing minimises checkweigher rejects and pack weight giveaway.

Marinated Meat Ready-to-Cook

Produces boneless meat slices or strips at defined thickness before the brine injector. Uniform thickness ensures uniform marinade injection depth and uniform cooking time in the finished ready-to-cook product.

Central Kitchen Pre-Processing

Provides flexible slicing for multiple product SKUs in a central kitchen environment — different thickness settings recalled from the frequency-conversion controller for each product without mechanical changeover.


▌ FAQ

Q:  What raw material temperature produces the best slice quality?

A:  0–2 °C (well-chilled fresh meat) produces the most consistent slice thickness and cleanest cut face. Semi-frozen meat at -2 to 0 °C can produce even cleaner results for thin slices (below 5 mm). Above 4 °C, soft tissue causes the meat to compress against the blade rather than cut cleanly, producing ragged edges and thickness variation. Ensure upstream thawing delivers raw material at 0–2 °C before the slicing stage.

Q:  Can both channels of the MT-SM-140A-D be used for different products simultaneously?

A:  Both channels on the dual-channel model use the same blade and belt speed setting — they cannot be independently set to different thicknesses in the same run. Both channels should process the same product at the same thickness in each production run. For different thickness requirements, the setting is changed between runs, which takes less than one minute.

Q:  Why is 220V supply standard rather than 380V?

A:  The MT-SM series is designed for fresh meat slicing applications in central kitchens, food-service preparation areas, and smaller processing facilities that may not have three-phase 380V power at all work stations. The 220V supply makes installation flexible. Three-phase 380V supply versions can be customised on request for integration into industrial processing lines where 220V single-phase is not available at the slicing station.
