▌ Process Flow — Stage by Stage

Stage 1 — Carrot Processing: Peeling, Dicing & Individual Blanching

Carrots are peeled by drum or roller peeler and cut by a dicing machine to the defined cube or slice dimensions specified in the mixed vegetable recipe. Cut dimensions are critical: pieces too large take longer to blanch, too small produce mushy texture. The carrot stream then passes through its own blanching stage — water temperature and residence time calibrated specifically for carrot, typically higher temperature and longer time than broccoli — before rapid cooling and surface drying ahead of the IQF freezer.

Stage 2 — Broccoli Processing: Trimming, Floret Separation & Individual Blanching

Broccoli heads are trimmed and separated into florets of defined size range. The broccoli stream is blanched separately with parameters set for broccoli: lower temperature and shorter residence time than carrot, tuned to inactivate peroxidase without cooking the florets to the point of collapse. An aggressive air-knife or vibration drying stage removes surface moisture before freezing — broccoli florets trap water in the floret structure, and inadequate pre-freeze drying produces heavy surface ice in the IQF tunnel that degrades pack appearance.

Stage 3 — Additional Components (Peas, Corn, Green Beans)

Additional mixed vegetable components — green peas, sweet corn kernels, diced capsicum, or green beans — are processed through their own washing and blanching streams as needed for the specific recipe. Each component is individually frozen before blending, ensuring every ingredient in the finished pack meets its own quality specification independently.

Stage 4 — IQF Freezing, Blending & Packing

Each frozen component stream feeds into a precision recipe blending system, where the target ratio of each vegetable component is metered gravimetrically and blended into the final mixed vegetable product. Blended product is then automatically weighed into retail bags, food-service pouches, or bulk packs, with checkweigher confirmation and metal detection completing the line.
