Final product size is selectable from 11 standard cut dimensions: 3, 4, 5, 6, 7, 8, 10, 12, 15, 18, and 20 mm — covering everything from fine 3 mm julienne strips through standard 10 mm dice to large 20 mm chunks for roasting and stewing applications. The same size setting applies to all three cutting modes — slicing produces discs of the selected thickness; stripping produces strips of the selected width; dicing produces cubes of the selected dimension. Q: How is the cut size changed between products?
A: Cut size is changed by swapping the blade set — each size has a corresponding blade configuration. The blade change takes approximately 10–15 minutes with standard tools. Both models use the same blade set format, so blade sets from the MT-VC-1000 are interchangeable with the MT-VC-2000. For facilities producing multiple cut sizes of the same vegetable in a single shift, Meatech recommends maintaining a blade set inventory for each commonly used size to enable rapid changeover.
Q: Can the MT-VC handle leafy vegetables as well as firm root vegetables?
A: The MT-VC is optimised for firm vegetables — root vegetables (potato, carrot, radish, yam), brassicas (cabbage, kohlrabi), and firm-bodied vegetables (pepper, courgette, cucumber, onion). Leafy vegetables (lettuce, spinach, pak choi, herbs) require a different cutting mechanism — typically a rotary blade or chopping action — because their soft, flat structure does not feed consistently through the blade system designed for firm product. A dedicated leafy vegetable cutter or salad bowl cutter is recommended for leafy vegetable processing.
