Multifunctional Vegetable Cutter

The Meatech MT-VC multifunctional vegetable cutter performs three cutting functions — slicing, stripping (shredding into strips), and dicing — from a single machine by changing the blade configuration, covering the full range of cut formats required for vegetable ingredient preparation in central kitchens, IQF processing lines, fresh-cut vegetable packing, and salad ingredient production. Two models cover the range from a compact 800–1,000 kg/h unit (MT-VC-1000, 90 kg, 380V/1.5 kW) to a larger 1,000–2,000 kg/h production machine (MT-VC-2000, 300 kg, 380V/1.5 kW) — both operating on 380V/50Hz and achieving equivalent throughput relative to their physical size through efficient blade geometry rather than higher motor power.

The Meatech MT-VC multifunctional vegetable cutter performs three cutting functions — slicing, stripping (shredding into strips), and dicing — from a single machine by changing the blade configuration, covering the full range of cut formats required for vegetable ingredient preparation in central kitchens, IQF processing lines, fresh-cut vegetable packing, and salad ingredient production. Two models cover the range from a compact 800–1,000 kg/h unit (MT-VC-1000, 90 kg, 380V/1.5 kW) to a larger 1,000–2,000 kg/h production machine (MT-VC-2000, 300 kg, 380V/1.5 kW) — both operating on 380V/50Hz and achieving equivalent throughput relative to their physical size through efficient blade geometry rather than higher motor power.

Final product size is selectable from 11 standard cut dimensions: 3, 4, 5, 6, 7, 8, 10, 12, 15, 18, and 20 mm — covering everything from fine 3 mm julienne strips through standard 10 mm dice to large 20 mm chunks for roasting and stewing applications. The same size setting applies to all three cutting modes — slicing produces discs of the selected thickness; stripping produces strips of the selected width; dicing produces cubes of the selected dimension. This flexibility makes the MT-VC the primary vegetable preparation machine for facilities that process multiple vegetable types and cut formats without the cost of separate dedicated machines for each function.

Role of MT-VC

IQF Mixed Vegetables

Primary cutting stage for carrot dicing and broccoli preparation. MT-VC set to 10mm or 15mm dice mode produces uniform carrot cubes for the IQF tunnel — size uniformity is critical for consistent blanching time and uniform freezing in the IQF tunnel.

Central Kitchen Pre-Processing

Vegetable ingredient preparation for ready-to-cook meal components. The three-in-one function allows a central kitchen to produce sliced, stripped, and diced vegetables from a single machine — reducing equipment investment and floor space requirements.

Fresh-cut vegetable packing

Produces cut vegetables (sliced courgette, julienne carrot, diced onion, pepper strips) for fresh-cut retail packs and salad bar ingredient supply. The selectable cut size range covers the standard retail fresh-cut dimension specifications.


▌ FAQ

Q:  How is the cut size changed between products?

A:  Cut size is changed by swapping the blade set — each size has a corresponding blade configuration. The blade change takes approximately 10–15 minutes with standard tools. Both models use the same blade set format, so blade sets from the MT-VC-1000 are interchangeable with the MT-VC-2000. For facilities producing multiple cut sizes of the same vegetable in a single shift, Meatech recommends maintaining a blade set inventory for each commonly used size to enable rapid changeover.

Q:  Can the MT-VC handle leafy vegetables as well as firm root vegetables?

A:  The MT-VC is optimised for firm vegetables — root vegetables (potato, carrot, radish, yam), brassicas (cabbage, kohlrabi), and firm-bodied vegetables (pepper, courgette, cucumber, onion). Leafy vegetables (lettuce, spinach, pak choi, herbs) require a different cutting mechanism — typically a rotary blade or chopping action — because their soft, flat structure does not feed consistently through the blade system designed for firm product. A dedicated leafy vegetable cutter or salad bowl cutter is recommended for leafy vegetable processing.
