The line is configurable for retail frozen skewer production and for food-service supply in fresh-marinated or bulk-packed formats.
▌ Process Flow — Stage by Stage
Stage 1 — Portioning: Bone Saw & Slicing Machine
Bone-in lamb shoulders, chicken thighs, or beef cuts are segmented to the weight range appropriate for the skewer format. For boneless formats, the meat slicer produces uniform slices or chunks at ±0.1 mm thickness — the consistency that ensures uniform marination penetration and uniform cooking time on the rotisserie or grill.
Stage 2 — Deep Marination: Brine Injector & Vacuum Tumbler
The brine injector delivers marinade directly into muscle tissue through a high-pressure multi-needle array — distributing flavour, tenderiser, and phosphate uniformly from surface to centre in a single pass. For bone-in products, the automatic bone-sensing needle lift prevents needle damage and bone splintering. Injected meat then enters the vacuum tumbler, where -0.08 MPa and continuous mechanical agitation accelerate marinade penetration and protein activation — compressing 24–48 hours of traditional soaking to a 2–4 hour cycle. Cook yield improvement of 10–20% is directly attributable to improved water retention from the injection-tumbling process.
Stage 3 — Forming & Skewering: Automatic Kebab Machine
Marinated meat mince or chunk meat is fed to the automatic kebab forming and skewering machine, which meters, forms, and inserts bamboo or metal skewers (80–300 mm) at 30–60 cycles per minute. Servo-controlled metering delivers ±0.5 g weight accuracy per skewer. Mold shapes are custom-designed: elongated kofta, round lamb skewers, flat-section chicken skewers, or mixed meat-vegetable configurations. For shawarma, the machine stacks seasoned slices onto a central skewer at controlled layer density.
Stage 4 — IQF Freezing & Packaging
Formed skewers are individually quick-frozen at -35 °C, preserving the shape set during forming. Automatic weighing and multi-format packaging (tray, flow-wrap, or MAP bag) completes the line. Metal detection provides the 100% inspection documentation required by retail buyers and importing country customs.
