The interior muscle remains largely unseasoned — which is why the first few bites of surface-marinated grilled chicken taste intensely seasoned while the interior is bland. This is not a recipe formulation problem. It is a physics problem that soaking cannot solve regardless of how long the meat is submerged.

Injection distributes marinade directly into the interior of the cut through a grid of needles spaced to cover the full cross-section of the product. Tumbling then further distributes the injected marinade by physically working it into the spaces between muscle fibres. Soaking marination appears low-cost because the equipment investment is minimal — a tank, a lid, and a refrigerated space. The hidden cost is in the labour required to manage it: loading and unloading tanks, monitoring marination time across multiple batches with different start times, turning or agitating product manually in large tanks, and cleaning soaking tanks between batches. In a facility running multiple marinade recipes simultaneously, soaking tank management becomes a significant and difficult-to-schedule labour demand.
